I see turnip Greens, beans, peeled and cut up potatoes, the red things look like canned radishes, but never heard of that before? I see beets, green shelled peas, also looks like peeled bellpepper. I guess the canned everything. Its much healthier and no salt to can. If you can obtain fresh veggies and you can freeze some of them, canning is great way to go.

When I used to do this it was called "bottling", in Kilner jars. If bottling is called canning in America then that answers my question of how everyone soldered the cand shut and didn’t poison themselves.

Mikescott, in the UK we use bottling for keeping food intact, as in these jars. Preserving is used for jams and chutneys. And then there’s pickling, where you soak the food in brine for 3 0r 4 days and then pack it in vinegar.
The term preserving would work for all three methods, so I don’t know why we split them up like this.

@ royal broil-Would those be "green gages" (spelling?) in the jar in the middle at the top? They’re a green plum-type of fruit. My mother used to can them. I think crab apples might be smaller than what’s showing in the jar, but I could be wrong.
